Butter Chicken Pola | Pan-Cooked Malabar Snack

Blessed Ramadan 2020, to all my reader friends. This year, amidst the COVID outbreak and lockdowns/partial lockdowns all over the globe, our Ramadan will be a different one. Yet, I hope we can all take this forced ‘Time-out” to reflect upon the more important things in life. We have been basically at home, since mid -January.  It has been a trying time, physically and mentally. Some days, I feel very lonely even though everyone is at home. We take for granted, so many little things in life like a simple outing to the supermarket, isn’t it the truth? Now that, Ramadan is here, we are settled into this routine a bit, more. Not to say it is easier, just more familiar. Butter Chicken Pola is an easy snack to make for Ramadan. It is the first recipe I am sharing this Ramadan. An all-time favourite and easy butter chicken filling is layered between layers of unsweetened crepe/ pancake batter and pan-cooked slowly till done. Cut into wedges and served, it is a delightful quick snack to prepare. There are many varieties of  ‘Pola’ or Pan cooked Pie / Cakes in the Malabar Region. Some are savoury, with chicken or meat fillings. Some are sweet with Sweet plantain or other Fruit fillings. Some are simply made with egg and flour, sweetened and flavoured with cardamom (Egg Pola). There are those made with flour and those made with Semolina, Dals. The variety is endless actually. It is quite a popular item, during the fasting month as an Iftar item (at the time of breaking the fast). It is also served to special guests. What is Pola? Pola refers to any pan-cooked cake, similar to a pie, that is cooked with the addition of eggs. It can be savoury or sweet. It can be plain or with toppings and filling. It is a popular Malabar Snack. The cake can have a pudding-like texture in some cases, and soft bun /pizza like texture in others. It can also be more crunchy or textures when using semolina. To make Butter Chicken Pola ahead of time: If you are planning to make this for guests, it all comes together quite quickly and is best made fresh. However, it reheats wonderfully in the microwave oven, so you can make it and keep it tightly covered and refrigerated ( without cutting ), till the next day when you plan to serve it (up to two days) and then just heat it for 1 minute at a time till evenly heated through. Cut and serve. Always test one piece to see if the Pola has heated through to the centre. You can also prepare the butter chicken filling and let it cool off before refrigerating securely. This way making the rest of the Pola is a breeze and can be done even after guests have arrived. How to make Butter Chicken Pola – Recipe at a glance:

  • Prepare the filling.
  • Prepare the batter
  • Prep ingredients for topping.
  • Grease a nonstick pan and add one layer of batter. Cook briefly covered.
  • Add the filling, followed by the remaining batter and garnished with toppings.
  • Cover and cook slow and low, till the batter is cooked through, into a soft savoury cake.

Ingredients:

For the filling:

  • 300 gms boneless chicken breast
  • 1 small onion, finely chopped
  • 1 tomato, chopped
  • 2 Tbsp tomato puree
  • 1 tsp chilli powder
  • 1/4 tsp cumin seeds
  • 1 tsp garam masala
  • Pinch black pepper
  • 1 tsp Kasuri Methi
  • 2 Tbsp cooking cream
  • ¼ tsp salt
  • 1/2 cup Coriander leaves
  • 3-4 Tbsp oil for pan-frying
  • 1/2 cup cabbage, shredded

To Marinate the Chicken:

  • 1/2 tsp chilli powder
  • 1/2  tsp garam masala 
  • 1/4 tsp turmeric
  • ¹⁄4 tsp black pepper
  • 2 Tbsp ginger-garlic paste
  • 1 1/2 Tbsp thick sour yoghurt
  • Pinch of red food colouring – optional
  • 1/4 tsp salt or to taste

For the batter:

  • 3 eggs
  • 1 cup plain flour
  • 3/4 cup – 1 cup milk
  • 1/4 cup oil (sunflower/ vegetable)
  • 1/2 tsp  – 3/4 tsp salt
  • 1/2 tsp baking powder

Toppings:

  • 1 small green capsicum, cut into thin rounds
  • 1 small carrot, cut julienne/shredded
  • 1/4 cup Chopped tomato (optional)
  • a few coriander leaves, a little ketchup
